Check if a Debian kernel is custom or stock built

Can I script an absolutely certain way of figuring out which of my servers have a custom-rolled kernel and those that don't ?

Uname -a and /proc/version will give you a hint... If someone is trying to hide a custom kernel's existence from you, however, it's easy to duplicate anything you could check without having root.
