PHP Font issues

Is there always a variable in a PHP script for fonts being pushed into something like a PDF converter or is it set "globally" ?

How can I change it ?

Php doesn't know anything about fonts. If you have some software written in php or any other language that generates PDF, please refer to that software documentation to see how to specify the font to use.
